Israel has been a country for just over seventy years, not nearly enough time to form anything resembling a cuisine. However, in recent years, this not-yet-cuisine has evolved into one of the hottest global culinary trends. Israeli-themed cookbooks win accolades, Israeli chefs open high-profile restaurants around the world and droves of foodies flock to Israel to sample fresh, sexy, colourful food served in local restaurants. Adventurous diners revel in the fact that there are so many cuisines to choose from; health buffs and vegetarians admire our love of vegetables and penchant for starting every meal with a salad. How did Israel become the IT country for food, and why now? This session traces the roots of this incredible food revolution, introduces its key players, maps out current culinary trends, and spices everything up with some tasty behind-the-scenes gossip.
